These are strawberry cheesecake cupcakes!
They are pretty much a vanilla cake “base” stuffed with sweetened cream cheese and a whole small strawberry! Melt in the mouth divine!
I iced these with pink cream cheese icing and pink sugar sprinkles for a baby shower.
