These jam doughnut cupcakes are for a beta test that Michelle is going to try out for me, and I figured it wouldn’t hurt to enter them into the Food24 Cupcake Competition!
1¼ cup self-raising flour
½ cup castor sugar
½ cup milk
2 eggs
1 teaspoon vanilla extract
½ teaspoon dried yeast
½ cup strawberry jam
20g unsalted butter (melted)
2 tablespoons cinnamon sugar
Preheat your oven to 180°C and fill a muffin tray with cupcake liners.
Combine the flour and sugar in a bowl, and make a well in the centre.
Whisk together the milk, eggs, vanilla and yeast, then pour into the well in the dry ingredients and whisk until smooth.
Share half the mixture evenly amongst the cupcake liners. Top this with a teaspoon of jam, then cover this with the remaining batter.
Bake for 16 minutes or until a cake skewer comes out clean.
Brush the top of each hot cupcake with a little of the melted butter and dip it into the cinnamon sugar mixture.
Best served warm.
