I couldn’t possibly have a birthday party without cupcakes, and since I was expecting too many guests, I decided to bake two different batches of cupcakes.
The first batch I did was a peanut butter cupcake! It was absolutely divine! Instead of icing them, I put a swirl of caramel on top with some silver dragees for decoration.
For the other batch I baked the strawberry cupcakes again- I do love this recipe- and decorated them with a two-tone pink and white butter icing and a strawberry flavoured jelly sweet on top of the icing.
These are strawberry cupcakes- a vanilla base with fresh strawberry pulp baked in.
I iced them with white and pale green coloured cream cheese icing, coloured dragees, heart and star shaped sprinkles, and then using a tube of metallic blue icing made specially for writing with- I added a zig-zag line to look like tinsel.
The sprinkles, dragees and the icing writing tube are all from Nicoletta. Currently, this is the biggest and in my opinion the nicest range of cake decorating goodies that are easily available in supermarkets!
I did these gawjiss little things for a friend’s little boy, who was turning one. At the time he loved all things marine, so she asked for “under the sea” themed cupcakes to fit the party theme.
The animals were made with coloured fondant (aka pettinice), and they took me a good week or so to finish. The cakes were vanilla, and the icing was a plain butter icing coloured with blue and white. I then piped it onto the cakes in a two-tone pattern to look like water!
