S’mores Cupcakes Beta Test

S’mores are a favourite treat for American families, especially when they’re out camping or sitting around a warm fireplace, and I just LOVE the combination of chocolate and marshmallow.

The trick with these particular cupcakes was baking them using Graham crackers to get their distinctive taste, without making them heavy and dry. It took a LOT of mixing and folding to make sure the batter stayed light and full of air!

Here they are as they came out of the oven- and as always I get a little tingle of satisfaction when a scratch recipe turns out with such perfection, especially if its the first time I bake it!

Once they were cooled they were filled with my own version of “marshmallow fluff” as I was battling to find it on the shop shelves, and then topped with a sticky, rich chocolate ganache. Then immediately before serving I piped a marshmallowy icing on top which was then toasted in the oven to evoke the “fireside” taste of S’mores!!

And here they are, nicely posed with chocolate and Graham crackers!

Thirtieth Birthday Cupcakes

I’ll bet you’re going to wish you went to school with Shamala’s daughter! This cupcake assortment was sent to her classmates to celebrate her birthday! These aren’t the best photographs unfortunately… I had a dreadful week and I photographed these with my cellphone just before I delivered them.

Some of her order was packaged in clear plastic boxes and tied with a ribbon…

And the following assortment was packaged in a pink paper cup with white dots on with a clear plastic dome fitted to it! It looks so cute!

A Green And Orange Dragon Cake!

Thandi orders from me on a regular basis, and for her Matteo’s birthday she ordered a dragon cake!

I turned this one around so his head and tail were on opposite sides of the board to the ones I did before, but like the others it had a layered chocolate cake sandwiched with ganache for the body, a head made of rice krispy treats, and a neck and tail made of a cake and ganache “cake pop” mixture- which I can mould instead of sculpt.

Here it is covered in ganache in preparation for its sugarpaste covering.

A Monster Chocolate Cake!

Remember the chocolate cake I baked for my dad’s birthday last year? Krizelda ordered one for her dad!

Its four layers of a delectable chocolate cake sandwiched with strawberry jam, caramel and chocolate cream cheese, covered with chocolate butter icing and smothered in a dark chocolate ganache- topped with a ring of whole glacé cherries!

Krizelda also ordered a batch of Neapolitan cupcakes-in-a-jar! Neapolitan of course, is a combination of chocolate, strawberry and vanilla flavours, and in a jar its perfect! When you open the jar the first thing you smell is the strawberry butter icing, and as you dig in with the spoon you get the chocolate and vanilla flavours mixed in!

Krizelda and her mom were also lucky enough to have a small taste of the purple velvet cake that I had cut open to photograph!
