Nerdmag held the “Nerdies” competition again this year, and a part of it is an auction where people bid on something or some service that another online personality can provide- with the money going to charity. This year’s charity was Wet Nose, and two of the items that were claimed for auction were batches of my cupcakes!!!
This batch of chocolate cupcakes with creme-caramel secret centres and chocolate-fudge icing were bid on furiously and I was very impressed by the demand on them!
For her birthday- which was an awesome celebration lemme tell you- Sass ordered chocolate cupcakes with a crème-caramel secret-centres and chocolate fudge icing. I couldn’t resist putting the sugar paste shoes on as decoration for our resident fashion queen!
I was expecting a lot of guests for my birthday party, so I figured 3 different batches would do for everyone to have a taste. I had also just acquired a cupcake stand, so I wanted them to look pretty and colourful as well.
I love berries, so there was no doubt that I would have berries in and on at least some of my birthday cupcakes… eventually I chose two secret-centre chocolate recipes, and instead of my favourite strawberry cupcakes I did blueberry instead! I topped the blueberry cupcakes- in sliver cups- with a purple butter icing, 3 fresh blueberries and silver dragees. I just love the sour berries and the sweet icing and cake combination.
I then baked chocolate cupcakes with a whole strawberry inside- the secret centre- in black cups. I iced them with strawberry flavoured, butter icing that I coloured almost red, a fresh raspberry and confetti sprinkles with edible glitter (‘coz I do love all things shiny).
The other chocolate cupcakes had a crème-caramel secret centre, and I baked them in gold cups. I iced them with an uber-rich chocolate fudge icing, hundreds and thousands and a little moulded fondant cupcake! As an added surprise, there was a little blob of caramel underneath the chocolate icing!
This was the first time I experimented with completely new recipes, and apart from the caramel I was rather pleased with the results!
The strawberry cheesecake cupcakes were a huge hit- and remain a favourite! They’re a “plain” cake base, filled with a little sweetened cream cheese and a whole strawberry, decorated with cream cheese icing. Mouth watering!
The other recipe I tried was a type of miniature apple tart in a cup! They were topped with glazed apple slivers and a home made caramel sauce. They weren’t perfect (according to the recipe) but they were rather tasty.
