Tanya ordered these cupcakes for her mommy darling’s birthday!
And I thought that since its one of my most popular cupcakes that I would make it a Food24 Cupcake Competition entry as well.
These little beauties are vanilla cupcakes, some with lemon Turkish delight and some with rose Turkish delight secret centres, topped with vanilla butter icing and little bits of Turkish delight!

Get yourself some Turkish delight, with nice-sized squares, that doesn’t have a chocolate coating around it! There are lots of flavours to choose from- there’s the traditional rose, lemon, blackcurrant, cherry- take your pick!
Mix up your favourite favourite vanilla cupcake batter!
Put a tablespoon of batter into the bottom of each cupcake holder.
Put one square of Turkish delight- in your chosen flavour- onto the batter, then put another tablespoon of batter over the top of the Turkish delight.
Continue till you’ve run out of batter.
Or until you’ve run out of Turkish delight, should that be the case.
Vanilla Icing
1 cup white margarine (softened)
1 teaspoon vanilla extract
4 cups icing sugar
2 tablespoons milk (I prefer water)
In a large bowl, cream the margarine and add the vanilla.
Blend in the sugar, one cup at a time, beating well after each addition.
Beat in the milk (or water), and continue mixing until light and fluffy.
Keep icing covered until ready to decorate.
Swirl the icing on top of the cupcakes and decorate with some small blocks of Turkish delight- in a flavour matching the block inside- and sprinkle a little edible glitter!
